suggest me a method to classify stratiform and convective rate and to extract the corresponding reflectivity value (using gridded IMD doppler weather radar data)
This is by no means a trivial task and depends strongly on local precipitation regime and overall climatology how to classify something as stratiform or convective. You can find some inspiration from Voormansik et al (2021) where they identified convective cells using both reflectivity values from radar and CAPE values from ERA5 reanalysis data. Study was done for Estonia, therefore there is high probability that exactly the same thresholds do not hold for any other region. But at least something to begin from.
